Sweet Potato Burger

I’d love to say that the BBQ season is in full swing but unfortunately it’s raining here!  Never mind, the week end was brilliant.  As such, every one seemed to be having a BBQ and so did our lovely neighbours who invited us over.  I brought round my favourite sweet potato burgers along with a roasted courgettes salad.

I am not a big fan of quorn or other meat substitute sausages or burgers.  I much rather make my own.  Not only they are quick and easy to prepare but also very tasty and not heavily processed like the shop bought versions.  Give them a try, they are well worth making.  You can add your favourite spice and herb to suit your taste.

Sweet potatoes make these burgers super good for you.  They contain a great amount of vitamins C (goodbye colds) and do wonder for you skin as they also have high levels of vitamin A & beta-carotene.  They also contain vitamin D which a lot of us seem to be missing in the UK.

Kidney beans provide a good dose of protein along with fibre to help digestion.

In a nutshell, they are healthy.

Eat them with your favourite toppings. For me, mango chutney, lettuce, avocado & a dollop of spicy hummus.

The recipe below makes 3 burgers.  You can easily double the quantities or more.  They do freeze well if you don’t eat them all.

Sweet Potato Burger

Ingredients

  • 1 Sweet potato
  • 1/3 cup Quinoa (cooked)
  • 1/3 cup Oats
  • 1 bunch Coriander (finely chopped)
  • 1/2 Red chilli (deseeded and finely chopped)
  • 1 sping onion (chopped)
  • 1/3 cup Red kidney beans (cooked)
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Coriander
  • 1/4 teaspoon Cayenne pepper

Directions

Bake the sweet potato in the over, 200C for 45 minutes or until tender.
When cooked and cooled a bit, remove the skin and mash the flesh with a fork.
Add all the other ingredients and mix. Form into burger shapes and rest in the fridge for 30 minutes to firm up.
For best result, add a splash of oil in a pan and fry for 3 minutes on each side
Assemble in a bun with your favourite toppings.
