Sweet Potato Burger
Ingredients
- 1 Sweet potato
- 1/3 cup Quinoa (cooked)
- 1/3 cup Oats
- 1 bunch Coriander (finely chopped)
- 1/2 Red chilli (deseeded and finely chopped)
- 1 sping onion (chopped)
- 1/3 cup Red kidney beans (cooked)
- 1/4 teaspoon Cumin
- 1/4 teaspoon Coriander
- 1/4 teaspoon Cayenne pepper
Directions
Bake the sweet potato in the over, 200C for 45 minutes or until tender. When cooked and cooled a bit, remove the skin and mash the flesh with a fork. | |
Add all the other ingredients and mix. Form into burger shapes and rest in the fridge for 30 minutes to firm up. | |
For best result, add a splash of oil in a pan and fry for 3 minutes on each side | |
Assemble in a bun with your favourite toppings. |
