Ratatouille
Ingredients
- 2 tablespoons olive oil
- 2 onions
- 2 red peppers
- 1 green pepper
- 2 courgettes
- 1 Large aubergine
- 3 garlic cloves
- 5 tomatoes
- 2 teaspoons herbes de provence
- coarse sea salt
Note
I best like this dish served with rice, but it also goes nicely with pasta.
Directions

Prepare all your veggies. Chop the onions finely and dice all the courgettes, peppers & aubergine. I like smallish chunks. Skin the tomatoes and chop. |

Heat 1 tablespoon olive oil in a large pan. Fry off the onion for a minute and then add the peppers. Cook for another few minutes. You want the onions and the peppers to start to soften. |

Add another tablespoon of olive oil and add the courgettes and aubergine. Cook for about 10 minutes, making sure you stir from time to time. |

Mince the garlic cloves and mix with the veggies. Cook for a minute. Now add the tomatoes and herbs along with a good pinch of salt and pepper. Pop the lid on and cook on a low heat for 45 minutes. Give it a stir every so often. |

Take the lid off and cook for a further 15 minutes. All the veggies should be soft now. Check seasoning and serve with rice. |
