Heat the olive oil in a pan and fry the onion for a few minutes. Add the carrots and cook until the onions are soft. Mix in the minced garlic and fry for a minute. |

Add all the remaining ingredients. Give it a stir and cook on a low heat with a lid on for 2 to 3 hours or as long as you wish.
Give it a stir from time to time and add some more liquid if needed. The longer you cook it, the thicker the sauce will be and the more flavour you will get. Be sure to cook it at least for 45 minutes.

Remove the bay leaf. Add seasoning and put the sauce in a blender if you like a smooth finish. |
