Banana Muffins

Ingredients
- 1/2 cup Oat milk or almond milk
- 1 teaspoon Apple cider vinegar
- 1/3 cup coconut sugar
- 1/3 cup Coconut oil or vegetable oil
- 1 teaspoon Vanilla paste or extract
- 3 Medium Bananas
- 1 cup Spelt flour
- 1/2 cup Wholemeal spelt flour
- 1 teaspoon Baking powder
- 1/2 teaspoon Bicarbonate of soda
- pinch Salt
- 1/3 cup Walnut (roughly chopped)
- 1/3 cup Raisins
Note
They are delicious warm or cold.
Directions
Turn the oven on to 180C. Mix the oat milk and the vinegar for a few minutes. Meanwhile mash the bananas Then add the sugar to the milk and vinegar mixture and whisk. Add the oil and vanilla paste and whisk again. Add the mashed bananas and stir. | |
In a different bowl, sift the flours, baking powder, bicarbonate of soda and salt. Give it a good stir. | |
Add the wet ingredients to the dry ones. Fold in the walnuts and raisins and divide the batter in 12 muffins cases. | |
Bake for 20 minutes. Leave to cool for a few minutes on a rack and enjoy! |
