Ratatouille

This is a classic french dish from the South of France.  My mum cooked it for me many times over the years and I still enjoy it as  much today.  I love these mediterranean flavours and the simplicity of the dish.  If you like your food on the spicy side, you can add a teaspoon of  piment d’espelette  (red chilli from the basque country) or a pinch of dried chilli flakes.  I have also added a handful of black olives that I picked up from the farmer market in the morning.

In order to release all the lovely flavours, it’s best to cook the ingredients for an hour or more and use fresh produce.  This dish is very easy to make, you simply need to stir from time to time. You can also make it the night before, it will only taste better the next day. You may add a tin of  tomatoes if you are short on fresh ones but be sure to get a good quality brand.

Ingredients

  • 2 tablespoons olive oil
  • 2 onions
  • 2 red peppers
  • 1 green pepper
  • 2 courgettes
  • 1 Large aubergine
  • 3 garlic cloves
  • 5 tomatoes
  • 2 teaspoons herbes de provence
  • coarse sea salt

Note

I best like this dish served with rice, but it  also goes nicely with pasta.

Directions

Prepare all your veggies. Chop the onions finely and dice all the courgettes, peppers & aubergine. I like smallish chunks. Skin the tomatoes and chop.
Heat 1 tablespoon olive oil in a large pan. Fry off the onion for a minute and then add the peppers. Cook for another few minutes. You want the onions and the peppers to start to soften.
Add another tablespoon of olive oil and add the courgettes and aubergine. Cook for about 10 minutes, making sure you stir from time to time.
Mince the garlic cloves and mix with the veggies. Cook for a minute. Now add the tomatoes and herbs along with a good pinch of salt and pepper. Pop the lid on and cook on a low heat for 45 minutes. Give it a stir every so often.
Take the lid off and cook for a further 15 minutes. All the veggies should be soft now. Check seasoning and serve with rice.
