If you buy Granola from your local supermarket, stop right now. They’re are loaded with sugar and while you think you are opting for the healthy choice, you would be better off having a chocolate bar! Granola is so easy to make, not to mention cheaper, that there is no excuse for not making it yourself. It only takes a few minutes to put together and you can choose whatever flavour you fancy. The options are endless.
I tend to pick Granola throughout the day, straight from the jar, as a little snack, but it’s great as a breakfast with yogurt and fruit. It fills you up for hours so you can start your day full of energy.
I usually just mix oats, coconut oil, sugar and whichever nuts and dried fruit I have on hands. This time, I have tried adding quinoa and it was lovely. It gave an extra crunch which was really good. If you don’t have quinoa in your cupboard, getting some would be a great idea as it contains a good amount of protein, vitamin E, B and fiber but you could just omit it and up the oats instead.
Granola with Quinoa & Goji Berries

Ingredients
- 1/2 cup Quinoa (cooked)
- 2 cups Oats
- 1/4 cup Coconut sugar (or brown sugar)
- 1 cup Cashew nuts
- 1/4 cup Sunflower seeds
- 1/4 cup Pumpkin seeds
- 3 tablespoons Linseed seeds
- Zest Orange
- 3 tablespoons Coconut oil (melted)
- 2 tablespoons Agave syrup
- 1/2 cup Desiccated coconut
- 1/2 cup Goji Berries
Directions
Turn the oven on to 150C. | |
In a bowl, mix all the dry ingredients (apart from the goji berries) and stir in the melted coconut oil and the agave syrup. Mix until well combined. | |
Place the oats mixture in a lined baking try and bake in the oven for 25 minutes, mixing the oats half way through. | |
Take out of the oven after 25 minutes or when lightly golden and add the goji berries. Let cool down before transferring to an airtight container. |
